1. How long do you leave meat on the counter before refrigerating?

2. How long do you keep meat and vegetables in the refrigerator before you get rid of them? (Is a little mold or discoloration ok?)

3. Is leaving cooked meat out on the counter for more than 3 days or marinating meat all day (not refrigerated) a very bad idea?

4. What country are you or your family from? (I'm curious to see if this influences our food practices.)

EDIT: Well, everyone's responses are making me feel more sane. I tried explaining to my boyfriend (he's Chinese) that his mom really needs to refrigerate meat and that yellow green onions are not so tasty, but it didn't go over so well.
