Recipe modifications

Hey guys. I was trying to come up with a casserole-mexican-type dish since I couldn't really find an uncomplicated one online. So I came up with this as untested recipe:

Salsa chicken with cornbread
Chicken, cut into chunks
Vegetable oil
Taco seasoning
Cornbread mix

Fry the chicken in oil. Add taco seasoning and mix to coat. Place in glass casserole dish. Cover with salsa and cheese. Prepare cornbread and spread over chicken. Bake.

So my questions are: What kind of cheese, velveeta or cheddar? Do you think adding some broth or water would make it more moist or would it not dry out at all? How long should I bake it? What else would you add to this, vegetable or otherwise? What would you serve it with? Does it sound yummy? :D
