DOS Color Output Overriding

Hello folks. This question is a bit complicated, so bear with me.

The question is: Is there any way to override color output on DOS programs that you run from within Windows (particularly Windows XP)?

The reason I ask is because I am visually impaired and every now and then I will come across a program that uses low intensity colors (such as Zork, which uses low intensity white on a black background). Ideally I would like to be able to switch my DOS Box (Command console or whatever you want to call it) from Color to High Intensity White on Black. I am banging my head on my desk trying to find a built-in utility or a third party tool that will help me do this. Basically I am looking for a way to strip the text colors of DOS programs and make them bright white on black.
