Trying not to coq this up

Hey tqc, lend me your culinary expertise.

On Wednesday, I'm planning to make coq au vin. My problem, the recipe calls for baby carrots and I'm not a fan of squishy carrots. However, if I leave them out, there won't be any vegetables in the dish*.

What can I substitute for the carrots that's meant to have a soft texture? (It has to survive 8 hours in a crock pot and work with chicken and red wine.)

*I'll do carrots if there's no better suggestions, but I won't be happy about it.
