I am making meatballs tomorrow, something I have never done before. The recipe I am using says it makes 10 servings, but only calls for 1 lb of ground beef. Since I rarely cook meat, I have no sense of size or portion. However, I just bought the beef tonight and 1 lb seems like a pretty small amount, and I am skeptical that it will really be enough for 10 servings (unless a serving is only one meatball).

Long story short...how many people can I reasonably expect to feed with 1 lb of beef? Should I buy more if I plan to feed 5 people? I'll also be serving some pasta and vegetables on the side.

i think a service would be 3 or 4 meatballs.

How many it makes depends on how big you make them. I usually make them an inch in diameter. I'd probably buy more just in case but you also add bread crumbs and stuff to meatballs which will make it go further.

I recently made meatballs using 1 lb of ground beef and it made about 20 golf-ball sized meatballs.

Combined with other ingredients (bread crumbs, etc), it makes more than you think it would.
1 lb is the right amount of meat, don't make the meat balls huge and it will easily make 10 servings with 3 or 4 meatballs per person. I make mine a little larger, and I'll still get about 7 servings of 3 meatballs per person. With veggies and pasta it will be a very filling meal.

Meatballs are deceptively easy, I just started making them a couple of months ago because I thought they were so insanely difficult to make. You'll do fine, and it will be enough to feed everyone!!

It actually makes quite a bit. I mix mine with breadcrumbs, salt, pepper, garlic, an egg to keep it together and then sometimes add cheese and pepperoni for an extra kick.

Like other folks said, one pound can go a long way depending on how big you make them and how much other ingredients you add.

Something I just tried was to mix in some horseradish with the meat. It gives it a different kind of spiciness than pepper does.

3-4 people. I'd double the recipe for 5 people.
